DIY Weekend Brunch

Five ideas that'll make putting together a delicious weekend brunch a breeze! Perfect for Mother's Day Sunday or any Sunday for that matter.
1. Mimosas are a  must

What You'll Need:
  • Bottles of champagne in an ice bucket
  • Carafes of juice
  • Bowls of fruit
  • Champagne flutes
  • Picks
  • Labels
2. Mini Cinnamon Rolls

What You'll Need:
  • 1 8oz tube crescent roll dough
  • 2 Tablespoons butter
  • cinnamon
  • brown sugar
For the maple icing:
  • 1 teaspoon maple syrup
  • 1 Tablespoon skim milk
  • 3/4 cup powdered sugar
Do It Yourself:
  1. Preheat oven according to crescent roll dough package directions. Layout half the dough (4 triangles) and pinch all the seams together. Flip over and pinch the seams on the back side together too.
  2. Using a rolling pin, smooth the seams and roll the dough into a square about 1/4″ thick. Brush with half the butter, and sprinkle with as much cinnamon and brown sugar as you want. Roll into a log and cut into 8 pieces.
  3. Place mini cinnamon rolls into a non-stick sprayed mini muffin tin. Repeat steps 1 and 2 with the other half of the crescent roll dough. Bake according to package directions.
  4. Meanwhile whisk together maple syrup and milk in a bowl. Add in powdered sugar until desired consistency is reached. Drizzle over warm cinnamon rolls.
3. Oats and toppings bar

What You'll Need:
  • 1 ½ cups water or milk
  • 1 cup steel cut oats
  • Chopped berries, dried fruit, nuts, brown sugar, chia seeds, for serving
Do It Yourself:
  1. Bring water or milk to a boil in a large saucepan.
  2. Stir in oats; reduce heat to low.
  3. Simmer uncovered over low heat, stirring occasionally, for 25 to 30 minutes or until oats are of desired texture.
  4. Serve in a warmed bowl or slow cooker with desired toppings.
4. Waffles are non-negotiable

What You'll Need:
  • 1 cup whole spelt flour
  • 1½Tablespoons baking powder
  • ⅛ teaspoon salt
  • ¼-1/2 teaspoon cinnamon
  • 1 cup water
  • 1½ teaspoons vanilla
  • 1 Tablespoon maple syrup
  • 2 Tablespoons canola oil
Do It Yourself:
  1. Mix ingredients in bowl, (do not overmix!) and allow to rise for a few minutes while your waffle iron heats up. The baking powder is going to puff the batter up. Make sure to grease your waffle iron well, we used canola oil, and applied it again after each waffle was made.
  2. Warm up the berries of your choice with some sugar in a pan or in a bowl in the microwave. I used a couple of cups of diced strawberries and about two tablespoons of sugar.
  3. Spread butter on your waffle and top with strawberries.
5. Mini flower bouquets for every guest
